Holiday Recipe: Homemade Yeast Rolls

HOMEMADE YEAST ROLLS

INGREDIENTS:
2 ½ cup Evaporated Milk
2 ½ cup Hot Water
1 cup Sugar
4 tbl Yeast
4 tsp Salt
1 cup Oil
4 Well Beaten Eggs
12-14 cup Flour

DIRECTIONS:
(recipe makes 30-40 rolls and 1 small loaf OR 2-3 large loaves of bread if preferred)
Add yeast to warm milk mixture and sprinkle sugar over yeast.
After yeast is dissolved, add oil and eggs.
Stir salt into flour before adding to liquid mixture and make a firm batter.
Knead lightly on floured surface for about a minute.
Turn into oiled pan to raise until doubled in bulk (about an hour).
Turn out on floured board and pat flat, handling as little as possible.
Cut rolls and place in oiled pan, turning once so tops are coated with oil. Let raise again until doubled.
Bake at 375º for about 15 minutes.
Brush tops with melted butter and bake about a minute longer. 

NOTE:
Excessive kneading reduces the lightness of the rolls so cut the rolls first.
The small loaf is made from the scraps of dough left after cutting out the rolls.
